‘Causa Limeña’ with tuna (Layered Peruvian potato dish)
Ingredients (serves 2)
250 g potato
1 can of canned tuna
20 g extra virgin olive oil
30 g mayonnaise
½ tsp turmeric powder
Sweet corn, avocado, mussels or chicken (op-tional and according to preference)
Salt (restrict in case of hypertension and/or fluid retention).
Method
1. Boil the potatoes whole in their skins, then peel and mash.
2. Add the olive oil with the turmeric powder and mix. Season with salt to taste and set aside.
3. Drain the tuna and mix it with the mayonnaise.
4. Arrange a layer of mashed potatoes on a plate. Place the tuna and mayonnaise mixture on top.
5. Cover with another layer of mashed potatoes and cool in the fridge.
6. Serve.
