‘Causa Limeña’ with tuna (Layered Peruvian potato dish)
Ingredients (serves 2)
  • 250 g potato
  • 1 can of canned tuna
  • 20 g extra virgin olive oil
  • 30 g mayonnaise
  • ½ tsp turmeric powder
  • Sweet corn, avocado, mussels or chicken (op-tional and according to preference)
  • Salt (restrict in case of hypertension and/or fluid retention).
Method
  • 1. Boil the potatoes whole in their skins, then peel and mash.
  • 2. Add the olive oil with the turmeric powder and mix. Season with salt to taste and set aside.
  • 3. Drain the tuna and mix it with the mayonnaise.
  • 4. Arrange a layer of mashed potatoes on a plate. Place the tuna and mayonnaise mixture on top.
  • 5. Cover with another layer of mashed potatoes and cool in the fridge.
  • 6. Serve.
