Chickpea and rice burger
Ingredients (serves 2)
  • 200 g cooked chickpeas
  • 30 g white rice
  • 40 g onion
  • 1 egg white
  • 25 g shiitake mushrooms (optional)
  • Extra virgin olive oil
  • Salt (restrict in case of hypertension and/or fluid
  • retention)
  • Provencal herbs, smoked sweet paprika, cumin...
  • (optional)
Method
  • 1. Cook the rice in boiling water a few more minutes than recommended in the
  • instructions, making it slightly over-cooked. Drain and set aside to cool. Place in a large bowl.
  • 2. Wash the chickpeas in abundant water, strain and add to the rice.
  • 3. Chop the onion and cook in a frying pan with a drizzle of olive oil until well poached and golden brown.
  • 4. Chop the mushrooms, add to the frying pan and sauté for five minutes.
  • 5. Finally add the chickpeas and rice.
  • 6. Season with salt and optional spices to taste. Mash together with the help of a fork until
  • obtaining a homogeneous texture. Mix with the egg white.
  • 7. Shape the burger into patties using your hands.
  • 8. Cook the burgers in a frying pan with a few drops of olive oil at medium heat and serve.
