Chickpea and rice burger
Ingredients (serves 2)
200 g cooked chickpeas
30 g white rice
40 g onion
1 egg white
25 g shiitake mushrooms (optional)
Extra virgin olive oil
Salt (restrict in case of hypertension and/or fluid
retention)
Provencal herbs, smoked sweet paprika, cumin...
(optional)
Method
1. Cook the rice in boiling water a few more minutes than recommended in the
instructions, making it slightly over-cooked. Drain and set aside to cool. Place in a large bowl.
2. Wash the chickpeas in abundant water, strain and add to the rice.
3. Chop the onion and cook in a frying pan with a drizzle of olive oil until well poached and golden brown.
4. Chop the mushrooms, add to the frying pan and sauté for five minutes.
5. Finally add the chickpeas and rice.
6. Season with salt and optional spices to taste. Mash together with the help of a fork until
obtaining a homogeneous texture. Mix with the egg white.
7. Shape the burger into patties using your hands.
8. Cook the burgers in a frying pan with a few drops of olive oil at medium heat and serve.
