‘Arroz con leche’ express (Spanish rice pudding)
Ingredients (serves 6)
600 g of skimmed milk (lactose free in case of
intolerance)
120 g of pre-cooked rice (or a small cup of rice)
60 g skimmed milk powder (lactose free in case of
intolerance)
Honey (optional)
Cinnamon (optional)
Lemon peel* (optional)
Method
1. Heat the pre-cooked rice in its container in the microwave (following the manufactur-er's
instructions).
2. Grate lemon zest.
3. Mix the rice, milk and powdered milk in a pan and season with cinnamon and lemon zest to taste.
4. Cover the pan and cook the mixture over low heat for eight minutes, stirring from time to time.
5. Remove from heat. Let cool in the fridge.
6. Serve and garnish to taste with honey and cinnamon.
* Wash the lemon peel thoroughly before grating.
