‘Arroz con leche’ express (Spanish rice pudding)

Ingredients (serves 6)
  • 600 g of skimmed milk (lactose free in case of
  • intolerance)
  • 120 g of pre-cooked rice (or a small cup of rice)
  • 60 g skimmed milk powder (lactose free in case of
  • intolerance)
  • Honey (optional)
  • Cinnamon (optional)
  • Lemon peel* (optional)
Method
  • 1. Heat the pre-cooked rice in its container in the microwave (following the manufactur-er's
  • instructions).
  • 2. Grate lemon zest.
  • 3. Mix the rice, milk and powdered milk in a pan and season with cinnamon and lemon zest to taste.
  • 4. Cover the pan and cook the mixture over low heat for eight minutes, stirring from time to time.
  • 5. Remove from heat. Let cool in the fridge.
  • 6. Serve and garnish to taste with honey and cinnamon.
  • * Wash the lemon peel thoroughly before grating.

You can also accompany with some nuts or raisins, according to tolerance.
