Chilled cucumber and apple soup
Ingredients (serves 2)
  • 1 medium cucumber
  • 1 apple (Golden Delicious)
  • 1 high protein yogurt (lactose free in case of intolerance)
  • 1 tbsp of extra virgin olive oil
  • Fresh mint
  • Salt (restrict in case of hypertension and / or fluid retention)
Method
  • 1. Wash and peel the cucumber and apple. Cut both into pieces.
  • 2. Mix all ingredients in a bowl and blend until obtaining a fine texture.
  • 3. Place in the fridge and serve cold.

Recommendations

You can also use non-dairy yogurt. The preparation can be accompanied with chopped nuts or cheese cubes on top, according to tolerance.
