Creamy potato soup

Ingredients (serves 2)
  • 200 g skimmed milk (lactose free in case of intolerance)
  • 30 g potato flakes
  • 20 g extra virgin olive oil
  • 15 g skimmed milk powder (lactose free in case of intolerance)
  • Salt (restrict in case of hypertension and / or fluid retention)
Method
  • 1. Mix all the ingredients in a saucepan and bring to a boil
  • 2. Cook over low heat, stirring for two minutes
  • 3. Add salt to taste and serve

Recommendations

You can also replace the potato flakes with cooked sweet potato or pumpkin. You may use it as a main or side dish. It can be served with diced cheese or ham, chopped boiled egg, or aromatic herbs on top, according to tolerance. You can obtain a vegan version by eliminating the milk powder and replacing the milk with a plant-based drink.
