Arepas ‘Reina pepiada’ (Venezuelan open-faced mini sandwiches)
Ingredients (serves 1)
  • 1 arepa (flat corn bread) or corn tortilla
  • 100 g cooked chicken breast
  • ¼ ripe avocado
  • 1 tbsp extra virgin olive oil
  • 1 tsp mayonnaise
  • Chopped fresh cilantro (optional)
  • Salt (restrict in case of hypertension and/or fluid retention)
Method
  • 1. Place the avocado, oil and mayonnaise in a bowl and mash with the help of a fork.
  • 2. Add the chopped chicken and mix.
  • 3. Season with salt to taste.
  • 4. Spread the mixture on the cut arepas or tortillas in the form of open-faced mini sandwiches.
  • 5. Serve.
