Microwave mini cake with banana and wal-nuts
Ingredients
1 ripe banana
80 ml milk (lactose free in case of intolerance)
60 g refined flour
20 g walnuts
15 g extra virgin olive oil
10 g powdered milk (lactose free in case of intolerance)
8 g baking powder
2 eggs
Cinnamon powder, clove powder, vanilla... (optional)
Method
1. Puree the banana pulp and the walnuts with an immersion blender until obtaining a fine and homogeneous purée.
2. Add the eggs and blend again until smooth.
3. Add the oil and milk. Mix well.
4. Add the flour and baking powder, optional-ly together with the spices. Beat with the help of a whisk to obtain a homogeneous texture.
5. Pour the batter into a microwave-safe mould. Cook at maximum power for six minutes until the cake is completely set.
6. Remove from the microwave and set aside to cool.
7. Unmould and serve.
