Microwave mini cake with banana and wal-nuts

Ingredients
  • 1 ripe banana
  • 80 ml milk (lactose free in case of intolerance)
  • 60 g refined flour
  • 20 g walnuts
  • 15 g extra virgin olive oil
  • 10 g powdered milk (lactose free in case of intolerance)
  • 8 g baking powder
  • 2 eggs
  • Cinnamon powder, clove powder, vanilla... (optional)
Method
  • 1. Puree the banana pulp and the walnuts with an immersion blender until obtaining a fine and homogeneous purée.
  • 2. Add the eggs and blend again until smooth.
  • 3. Add the oil and milk. Mix well.
  • 4. Add the flour and baking powder, optional-ly together with the spices. Beat with the help of a whisk to obtain a homogeneous texture.
  • 5. Pour the batter into a microwave-safe mould. Cook at maximum power for six minutes until the cake is completely set.
  • 6. Remove from the microwave and set aside to cool.
  • 7. Unmould and serve.
