Flourless pancakes
Ingredients (serves 4)
  • 90 g water
  • 30 g nuts (almonds, hazelnuts, walnuts...)
  • 20 g skimmed milk (lactose free in case of intoler-ance)
  • 1 egg white
  • 10 g Psyllium
  • 5.5 g flax seeds
  • 0.4 g baking powder
Method
  • 1. Crush the nuts properly and mix with the Psyllium and baking powder.
  • 2. Make a well, then add the wet ingredients (water, milk and egg white). Stir to com-bine.
  • 3. Preheat de oven to 180 ºC.
  • 4. Divide the batter into 4 equal portions.
  • 5. Pour them on an oven tray, previously lined with baking paper.
  • 6. Pancakes should be round shaped, about 2 cm thick.
  • 7. Bake for ten to fifteen minutes.
  • 8. Remove from the oven and cool for five to ten minutes.
  • 9. Serve, decorating to taste.

Recommendations

You can also replace the crushed dried fruit with legume or flax flour.

You can serve with banana, yogurt, avocado, ham or cheese, according to taste and tolerance.
