Cucumber, tofu and hazelnuts salad
Ingredients (serves 2)
120 g tofu
150 g cucumber
8 or 10 hazelnuts
1 tbsp extra virgin olive oil
1 tsp soy sauce (optional, restrict in case of hypertension and/or fluid retention)
1 tsp honey (optional)
Method
1. Wash and peel the cucumber. Cut it into thin wide slices.
2. Cut the tofu into dices.
3. If soy sauce and honey are added, mix them with the olive oil and little water until a dressing vinaigrette type is achieved.
5. Chop de hazelnuts.
6. Arrange the diced tofu and the sliced cucumber at the base of the plate or bowl.
7. Decorate with the chopped hazelnuts on top.
8. Season with the vinaigrette to taste and serve.
