Cucumber, tofu and hazelnuts salad
Ingredients (serves 2)
  • 120 g tofu
  • 150 g cucumber
  • 8 or 10 hazelnuts
  • 1 tbsp extra virgin olive oil
  • 1 tsp soy sauce (optional, restrict in case of hypertension and/or fluid retention)
  • 1 tsp honey (optional)
Method
  • 1. Wash and peel the cucumber. Cut it into thin wide slices.
  • 2. Cut the tofu into dices.
  • 3. If soy sauce and honey are added, mix them with the olive oil and little water until a dressing vinaigrette type is achieved.
  • 5. Chop de hazelnuts.
  • 6. Arrange the diced tofu and the sliced cucumber at the base of the plate or bowl.
  • 7. Decorate with the chopped hazelnuts on top.
  • 8. Season with the vinaigrette to taste and serve.
