Pea purée
Ingredients (for 2 servings)
  • 100 g fresh or frozen peas.
  • ½ avocado
  • 2 tablespoons of yogurt (with or without lactose, according to tolerance and skimmed, whole or rich in proteins according to condition)
  • 1 lemon
  • Toast or sticks of toasted bread
  • Salt (restrict it in case of hypertension or fluid retention)
  • 1. Boil the peas in a saucepan with plenty of water for a couple of minutes. Drain them and let them cool.
  • 2. Mash the peas together with the avocado pulp, a squeeze of lemon juice and the skimmed yogurt. Reserve some yogurt to decorate.
  • 3. Put it on the salt point.
  • 4. Place the paté in a bowl, top with the reserved yogurt and some grated lemon peel.
  • 5. Serve with toasted bread.
