Tomato and basil soup
Ingredients (serves 1)
  • 250 g ripe tomato
  • ½ slice of stale bread
  • A handful of basil leaves
  • 2 tbsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • Pepper
  • Salt (skip in case of hypertension or fluid retention)
  • 1. Wash the tomatoes. Remove the stem and slice.
  • 2. Put the tomatoes in a tall container suitable for blending, and add the bread, extra virgin olive oil and vinegar.
  • 3. Save some basil leaves for decoration and add the rest to the container.
  • 4. Blend the contents until smooth. Strain.
  • 5. Season with salt and pepper.
  • 6. Serve the soup decorated with basil leaves and a few drops of olive oil on top.


If the soup is too thick, add a little cold water. In case of suffering a condition causing weight gain, reduce the oil by half.
